Black & White Wednesday & Mattar Paneer~Blog Hop# 5

Cheese Dosa


My daughter’s favourite, sorry one of her favourite breakfast is Cheese dosa.
If this goes in tiffin Complaint Box goes quietly to school .Then comes back and complains that she did not get the dosa as her friends finished it.

Boiled Peanuts



One of our favourite foods is boiled peanuts.
Just bring home the peanuts, wash them and boil them with salt. Generally I boil them in the cooker. 2-3 whistles and I get questions "where are the peanuts?"


So generally after lunch on a Sunday we snack on these.

Potato and Spinach Kabab?


W hat do you when you have potatoes, that ane not too big to be called small potatoes and not too small to be called baby potatoes?

What do you do when you have palak that has about given up on you?

Cook them together right?

 That is exactly what I have done here. Since I am not too sure about the classification of this dish I have called it Kabab?

Alsande Usal

I am thrilled my post Corn Dhokla has given me maximum hits of 1072 in one single day! This I thought was the end of the story but yesterday  read   Umm Mymoonah post and   she has selected mine. My cup of joy is overflowing!!

 Now coming to today’s post…

Alsande or I believe they are called Cow Chick Peas are cooked regularly in Goa. In the month of May they are purchased in bulk, sunned and stored for consumption during the year.

The most common dish made out of these highly nutritious beans is Alsande che tonak. A beautiful blend of spices, coconut and beans tastes great with pao or une.

 But I am repeating myself. Why? Because I love this quintessential dish which makes its appearance in every Goan marriage or munj.

But today I have made this as a simple Usal. The ingredients are very few and the taste is normal everyday comfort food.

 I am sorry I did not think of clicking a picture of the alsande before boiling them or soaking them I have tried to click them after boiling but they were not easy to handle.

Ingredients:
1 cup alsande
1 onion
2 cloves garlic
1 green chilli
 A few springs of coriander
½ tsp red chilli powder (adjust as per taste)
½ tsp turmeric
1 tsp goda masala
A small ball of tamarind
A small piece of jaggery (optional)
For Tempering:
Oil
 Mustard

Method:
1.      Soak the alsande after washing them in sufficient water overnight.
2.    Soak the tamarind in water and extract thick juice.
3.        In the morning add a little salt and pressure cook for 3 whistles. Let the pressure come down by itself.
4.         In the meanwhile coarse grind the onion, coconut, garlic and the dry masala & coriander in the mixer.
5.        In a separate kadhai/wok heat oil. Splutter mustard.
6.      Add the ground masala and stir fry till the onion is translucent.
7.    Add the boiled alsande.
8.     Add the tamarind paste and jaggery if using. Adjust the seasonings & bring to a boil.
9.    Serve hot with Jowari roti or chapatti. I love it with plain white rice.

Black & white Wednesday with Cauliflower in Tomato Gravy

Cauliflower one veggie we make often!  The versatility of the veggie is such that it can   be made into a quick stir fry for chapatti& rice, or fried for a snack or make into a pickle with a slight shift in ingredients. Each has its own charm, Own following!!

So when Priyaof Mharo Rajasthan's Recipes, announced the veggie of the month as cauliflower to be hosted by Tiffincarriersantiques.blogspot.com I knew I would be sending my entry here.

I would like to send this entry that my SIL &  I had long long ago copied from somewhere.

Ingredients:

 1 medium sized Cauliflower cut in bite size florets
Oil for frying

 For the Gravy:
2 big or 3 medium sized onions
3-4 tomatoes
6 flakes garlic
1”piece of ginger
½ tsp Coriander powder
½ tsp cumin powder
½ tsp amchur powder
½ tsp turmeric
1 tsp chilli powder
½ tsp garam masala
½ tsp pav bhaji masala
½ cup milk(for low fat version else use fresh  cream)
 A few springs of coriander

Method:

1.    Soak the cauliflower in water and salt for about 10 minutes.
2.   Drain it and with a little water and salt cover with a lid and par boil the cauliflower. Say about 5 minutes or till you get the aroma of boiled cauliflower. (2 minutes in the microwave).
3.   Drain the cauliflower, reserve the water and dry the florets on kitchen napkin.
4.   Heat the oil and deep fry the florets till golden brown, drain. Keep aside.
5.   As you are frying grind the onion pieces in the mixer with garlic, ginger and the coriander leaves.
6.   In a separate kadhai/wok with a little oil fry the ground onion till the raw smell goes. Now add the crushed tomatoes. Stir fry till the water evaporates and the oil starts coming out.
7.   Add all the dry masala and fry till you get a nice aroma.
8.   Now add the cauliflower, stir. Add the milk. Adjust the seasonings use some of the reserved water for adjusting the thickness of the gravy.
9.    Bring to a boil. Garnish with chopped coriander.
10.  Serve with chapatti, naan.

Virgin Mojito



The other day we visited KFC. We means my younger daughter and me. She loves some popcorn chicken and hot wings for a drink she wanted  Virgin Mojito!


I did not mind paying for the chicken but the drink it was a rip off! 60 bucks!!

Addendum to The LGSS`Capsicum or Bell Peppers

 I am  terribly sorry I for got one entry sent by Amy for the series round-up.  My only excuse is that it got buried under the mail I keep receiving! Sorry Amy!

In case anyone is wondering what this picture is its stuffed capsicum. Stuffed with fried rice. Looks very pretty does it not but was outright rejected by all in my family so I did not post it.

Who does not like chaat?

 We have saying in Kannada which says, “Bhina Ruche Janaha” This means different people have different tastes. So there is one person who I know does not like chaat. Thankfully in my family we all love them.

The Lets Get Stuffed Series~Bell Peppers or Capsicum

had in the month of August hosted the very popular Lets Get Stuffed Series. My choice for the event had been Capsicum or Bell Peppers.  Yes Dears you had to stuff Capsicum or Bell Peppers!!

I was very disappointed as I had only 6 entries.  Anyway this happens.

Now here is the round-up of the series.

    Delicious!

4.       Ramya  of Ramya's Recipe sent Stuffed and Baked Bell Peppers. Health bhi taste bhi!

5.     Vatsala of Show n Tell sent me this delicious dish of Stuffed Bell Pepper with Oats and Potatoes. Hmm! Lovely!

Paneer and Tofu Tikka Burger~Bloghop Wednesday #4

For the Blog Hop this time I am paired with Prathima of Prats’ Corner.   
 
Now came the biggest challenge what to make. For each recipe that I read I wanted to make! Finally I choose this Paneer Tikka Sandwich recipe for it falls in is an entry for my current event (Please send me your entries for I have hardly any) and most importantly I was sure my kids would love it.

Healthy Instant Corn Dhokla

We all love dhokla.
Would you like some now?

 For this instant no need to wait for the batter to ferment? Do you want it to be healthy, with veggies and no complaints from the kids?

If your answer is yes then this recipe is for you! 

I came across in Tarla Dalal’s Cooking & More that I had borrowed from our library. I don’t have the copy of the recipe but I noted down the recipe. 

The only change I have made is added 1 tsp of garlic paste and steamed it in a vessel.

Ingredients:
1 cup sweet corn
½ cup curds
1 cup rava
½ tsp ginger green chilli paste
Salt
1 tsp fruit salt
¼ tsp lemon juice
¼ tsp oil
1 tsp garlic paste(my addition)
Method:
  1. Blend sweet corn and curd in mixer till smooth.
  2.  Add rava, ginger garlic paste, green chilli paste, salt & half cup water mix well.
  3.  Just before steaming sprinkle fruit salt and lemon juice. Mix gently
  4.  Spoon in greased muffin/ vati moulds and steam for 15-20 minutes. Cool and serve.

Surprised, as I was not expecting her to choose me, as there is lot more that I have to travel and pleased ….of course you will be pleased   too if  you are chosen too!
