Eggless Lemon Curd


Long time ago one of our friends Vivek who lives in the UK had mentioned about this delicious lemon curd. Curious I searched for the recipe and somehow the procedure listed out put me off. It seemed too complicated and eggy and what if no one eats it questions plague me and I gave up.

Now after a long time I searched was for the eggless lemon curd recipe.


And my search stopped here at Geeta’s Kitchen .   I have not made any changes in her recipe but for the sake of documentation I am posting my lemon curd recipe here.

Ingredients:

yellow lemon zest from 5 lemons (these were what I needed to make my next ingredient)
1/2 cup fresh Lemon juice
1/4 cup water
3/4 cup Sugar
2 Tbsp Corn Flour
1/4 cup Milk, any type
1 Tbsp unsalted Butter  
1 pinch of salt
Method:
1.     Grate only the yellow part of the lemon (but not the white pith) before juicing. Then squeeze out the lemon juice.
2.    Put the lemon rind, juice, water, sugar, salt and corn flour in a big container of the mixer and process until thoroughly combined. Open the lid and drink in the aroma. Mmmmmmmmmmm divine!
3.    Pour the mixture in the microwave proof dish and heat on 100% power for 2 minutes. Remove from the oven and beat well using a wire whisk. By now you will start getting “what are you making queries” and a very interested audience.
4.    Return to the microwave and heat on high for another 2 minutes or until the mixture boils and becomes clear.
5.    Remove from the oven and beat vigorously with the whisk.
6.    Add the milk one spoonful at a time and whisk thoroughly after each addition.
7.    Add the butter and beat well until all the butter has melted and is incorporated into the lemon curd. Let cool slightly. Lemon curd will thicken more when it cools.
8.    Pour the lemon curd into a clean sterile jar, cover.
9.    Serve warm or cold. Store any extra in the refrigerator.

What a delicious aroma the stuff has!! I could not leave it alone.   My neighbors’ daughter Stacy  also loved it. in fact we are having bread these days for breakfast as I want to eat this delicious spread. 
 This was too sour for my hubby and kid no2.
 Kid 1 is not aware of this delicacy lying in the fridge. She does not appreciate sweets so I did not tell her.
