Trifle Pudding for BM #24

For this BM #24 my theme is Kids Special Desserts.  Next 3 days its desserts galore here.

Now since I am not still comfortable tying out a lot of details my post is short out of necessity. Do I hear a sigh of relief don’t worry I will continue writing my long lengthy posts soon. (I wish I knew how to make that smiley of a devil here)!

One thing I have learnt and I will like to share with all of you. In case you find a bag heavy please ask someone to help you. You are no more the she-woman you once were!!

Let’s begin with the big hit that we had at Akanksha’s birthday party it was a theme party themed around Harry Potter.

I was supposed to conjure all the food that was needed.

One of the desserts was pudding; actually I was to make treacle tart.  Tarts you all know are time consuming and frankly I knew I will not be able to manage making food and tarts for about 30 people.  Once I could handle that not so now.

So I did some sweet talking and convinced the elder daughter then second one, in that order, that Trifle pudding is acceptable. (Of course I had to make a second dessert too but more about that later). Right now let us check out Trifle Pudding.

The beauty of this dish is that you can make it the day prior to the party and top it with whipped cream on the day of the party even as late as 1-2 hours before you need it.

( O these pics are mostly taken by my daughter I was too busy to think about pictures etc.)

Ingredients:
·        ½ kg cake, I brought plain vanilla sponge
·        2 tins of fruit cocktail( I forgot the weight but they were del Monte)
·        100 grms  jar of mixed fruit  jam(optional)
·        Whipped cream (please see notes below)
·        Some liqueur about 2 tblspn (optional )
·        Cherries for decoration

Equipment:
·        A big Glass bowl
·        A medium bowl
·        A small bowl and about  ¼ cup water for melting the jam
·         Sharp knife
·         Beaters and bowl for whipping  cream
·        Ice in big bowl for whipping

Method:
·        Make slices of the cake, we made some small and some slices. Layer them in the bowl. Reserve some slices for the topmost layer. (This will depend basically on the size of your bowl and the slices of the cake I had some 10-12 slices).
·         If you are using the jam mix the jam and water to make a thick slurry.  You will find it easier if you heat it.
·        Drizzle it with a spoon along the sides. As I was doing this just for colour I used very little along the edges of the bowl.
·        Meanwhile drain all the liquids from the fruit cocktail and mix the liquid with liqueur.
·        Sprinkle some 2 or 3 tblspn of the liquid. Add the fruits from the fruit cocktail just enough to cover the slices.

·        Repeat these steps till you are about 2 inches away from the top of the bowl.  (For the last layer finish all your fruits, reserve the liquid).
·        Lay the cake slices on the fruits so that it covers all the fruits.

·        Sprinkle all the liquid from the fruits use the jam slurry .

·        Now cover the bowl with cling film and let it sit in the fridge till needed. (Mine resided in my neighbour’s fridge and came home just 2 hours before the party.)

·        Just before the first guest arrived I beat the whipped cream over a bowl of ice till I got firm peaks.
·        Spread the whipped cream on the cake till the entire top.
·        Decorate with cherries. I wished I had some jam slurry to draw a few lines but by then it was residing in the b’day girl’s tummy so sorry.

·        Cover with the cling film and put back in the fridge.
·         Serve chilled to a lot of oooooooo! And ahhhhhh!

Notes
I cannot tell you the exact amount of whipped cream I used. For I popped about 500 grms of the unwhipped cream and whipped it.
My vessel which holds 2 litres of milk was ¾ full.
I used the whipped cream on both the cake and pudding and there was enough left for the girls to eat the whipped cream the next day and say this was the best dessert, Garfield like( when Garfield has finished the pizza or lasagne by himself)!!

Mere Attithi Series #6

There was a time when I had almost given up blogging for I was frustrated!!

I knew more about the hazards of online friends than the benefits so I was reluctant to try something new.

But I had registered at Indiblogger and I saw quite a few sites put up for reviews and the sites were reviewed critically but in a constructive way. Naturally I followed the beaten track. One of the first reviews I got was from Mythreyi. I am grateful to her as because of her review I continued blogging and tried to implement her suggestions. Tried copying what was on her place.

So who is Mythreyi?   Well for one she my Attithi today but then she has other identities too, other than the ever smiling author of the blog YUM! YUM! YUM! that is where she churns out her delicious yummy treats.

Her full name is Mythreyi Vattikuti lives in Frisco, Texas in United States. She is a busy working mom with two young kids and happily married to Vijay. She confesses that,” cooking and gardening are my passions. Music and Moves (dance) are my pleasures. Travel around the world is my dream. I am from India and respect every aspect of our culture and love to follow traditions.”

Mythreyi’s has loved the kitchen from the she was a kid. She has fond memories of making” potato chips when mom is not at home along with my sister.” This love grew and has now become a passion. “And then came the opportunity to stay in the room with my wonderful friends in those good old college days that means opportunity to cook more on my own :-).”

Most of Mythreyi’s recipes are spicy, savoury and with the focus of healthy ingredients, some of them are some are her moms recipes. Then she has built on the foundation and put the Cookbooks and the net to a very delicious use.

Like most of us Mythreyi owns her basic to her mom who is a great cook and her “true inspiration”. Food is Mytheryi’s first love (of course after her husband and children) and she “ always love reading cook books, watching Food channels ( my fav is 30 minutes meals on Food Network) and surfing food sites ( my fav is Vah Reh Vah with Vah Chef) to explore new recipes and try them and present to you. “

Mythreyi’s love for food extends not only to her kitchen she is game for “new restaurants and new cuisines, to know the possibilities of different styles of cooking and ingredients.”

If you are interested in Italian, Mexican and Thai you can just step right in Mythreyi’s kitchen!! Interesting right!

So how did Mythreyi get into blogging?  Her passion for cooking and presenting plus the variety of healthy food she was cooking necessitated maintaining a log of recipes, and some of her friends also suggested to start the blog. (Lucky for us)!
According to Mythreyi ,”But it all started one afternoon when  I made exquisite Baby Zucchini Bajji.”

So the blog baby was born on October 25 2010 and promptly christened Yum! Yum! Yum!

Lucky Mythreyi has her best supporter in her husband. “As he is already into photography he gave me several tips on food photography and gave several suggestions on the look and feel of my website being a first critic, I am glad he did that that improved the quality of my blog.”  Not far behind it is her son who is a great help in the kitchen Mythreyi proudly says and her daughter “has started pretending just like her mommy in the play kitchen. J”

“My son”, says Mythreyi,” enjoys all the baked goodies in my cooking, as he involves in kneading and stirring for the cakes & cookies, he takes special pride in those activities.  He started calling me ‘Yum Yum Mommy’ these days.”

Now the domain name for Mythreyi’s site is “YummyOdds” why so? “My sister always gets amused with the dishes I make with all the odd ingredients.  That is the reason I picked ‘YummyOdds’ as the domain name for my site. She is my true follower and testimonial as she tries most of my recipes with no failure.”

Are these her only talents? Well no Mythreyi is also a poetess she writes Telegu poems “it’s not active” she says but then you can always check it out “

The most popular post on Yum! Yum! Yum! Is AndhraChicken Curry  but Mythreyi’s personal favourite is a “this gorgeous Dessert. This is definitely my favorite on my blog.” Well Mythreyi I Love this one.

Blogging has helped  Mythrei get over her dislike of mushrooms here is the hero  Mushroom Masala Rice . Mine to Mythreyi!

When Mythreyi’s sister visited her she was pregnant and the menu was was perfect.” I called it a Weekend Rescue Menu but this post holds the special memories in my heart.”

You forgot the Tofu Lettucewraps, Avocado Mango Salsa and Chocolate Barfi Mythreyi my favourites !

I asked Mythreyi how long she plans to blog and her reply was “For life time. Currently I am a busy working mom and will get hardly any time to work on my blog. But still I always try to find time to spend on my blog. I am planning to continue the same schedule for lifetime.”

It is going to be difficult as Yum! Yum! Yum! Has 170 followers and Mythreyi tries juggling her busy schedule and stay connected with them all. Of course she has no time for conversations but she makes it a point to”  I always visit everybody’s blog and get connected through the comments on their visual treats in their spaces.  “

Which is more than what I do Mythreyi. Kudos to you dear!!

Well I think you guys have had enough of my bak bak now let us all move over to Mythreyi's post!

Cauldron Cakes for Eggless Baking

WISH YOU A VERY HAPPY NEW YEAR!!

My daughters are Harry Potter Crazy! There is no word for it.
So I was not too surprised when my elder daughter suggested a HP themed party for her younger sister who was to be 11 this year. In preparation she had surfed the net for all the dishes mentioned in the books. (this was a surprise to the b’day gal boy was she bugged because we did “khusr phusr” without her!!
So I had the recipes for treacle tart, pumpkin juice, stew and this Cauldron Cake. The highlight!!
Around the same time Gayatri asked us to suggest recipes for egg less baking in a crazy moment I suggested this Cauldron Cake. I need to mention here I did not expect her to choose this recipe I was insecure of making this recipe with eggs and egg less?
As you know eggless cakes are very delicate. Handling them needs you to be deft. To exemplify I had 24 cup cakes or muffins and still I got only 2 finalists the rest were all runners up.
Did I have complaints about the cake? No sir not a pip from anyone!
Thanks Gayatri if it had not been for this challenge I would have ordered the cake from the bakery. Of course these were not on the menu for the party! (I made another cake with eggs for that.)

Guest Hosting Only Street Food of the World

Food  Food and Food is what makes the world move. From times immemorial animals and man have fought just for food.

Do you know that Street food was once a necessity for the urban poor?

What is Street food? According to Wikipedia,” Street food is ready-to-eat food or drink sold in a street or other public place, such as a market or fair, by a hawker or vendor, often from a portable stall. While some street foods are regional, many are not, having spread beyond their region of origin. Most street foods are also classed as both finger food and fast food, and are cheaper on average than restaurant meals. According to a 2007 study from the Food and Agriculture Organization, 2.5 billion people eat street food every day.
Today, people may purchase street food for a number of reasons including "ethnic taste, nostalgia, and the opportunity to eat quickly obtained, reasonably priced and flavorful food in a sociable setting." Historically, in places such as ancient Rome, street food was purchased because urban poor did not have kitchens in their homes.” Want to learn more check here.
