Jam Tarts~ A Sweet Punch

For this month Sweet Punch Ria has chosen Jam Tarts!
My heart sank at the sight of the recipe for it looked like a shortcrust pastry and something that had ended as a mess that I had to bin. I was sure I will sink right under again!!

But since I don’t usually give up easily I decided to try my hand once again. One last time I told myself. Make only a few that you can eat up if there are no takers. And so I did!!

Before we start let me confess that I used not only Ria’s recipe to make the tarts but also what I googled about them for my fear about failing this was quite huge.

But I was unduly worried for the tarts were a huge success!!

Not only I made it & it got over before I had a decent snap in spite of the jam that I had used was strawberry jam that was lying in the fridge for some time and hence I baked the tarts again today. To tell you how good they tasted my husband, yes the mental diabetic, fetched me the ingredients for the next bake most importantly willingly and relished the tarts… Thanks Ria!!!

For quite some time now I have been meaning to post this award  that Jay has bestowed on me. Most of you may know Jay do check out her place for some lovely recipes. Thanks Jay you are great! Its sweet of you to think of me.

This  award has questions which  are really simple but  thought provoking , make you think about your desires in life and your priorities. I really had to think about my long term goals. Check what I take for granted and sort my pleasures in life.
Thanks once again Jay!

So what is the award all about.?

Here it is Ladies and gentlemen the 8 thought provoking questions.

1. What makes you laugh, smile or giggle?

Life is  a mirror. Laugh and the world laughs with you.

What makes me laugh, smile or giggle--- anything a good joke, a compliment, memories, the rose my husband gives me for no reason at all, the boquet of weeds  that my daughter picks for me , the secrets we share,Tom & Jerry show, the sun peeping out after a downpour... the list is endless.

2.What are your dreams for your future?
Daughters happy in their chosen lives, good health, some money, a relaxed life and no worries. thats all .

3.If you are to go to a cruise, where would it be and why?

Nice idea drifting in the high seas on a raft, no one around..... perish the thought for that will mean no food or water. Lets begin all over again  Queen Elizabeth II , hubby  me & the kids. Around the world.

4.How would you spend your vacation time and with whom?

Doing what we, that is hubby and kids, all like the best eat, drink sleep and ocassionally go out.
5. If given a chance, what life would you choose? Your life now or your past?

Tempting the past will bring Amma back ,MIL back, kids small , carefree life..
But is it fair?
I will make the same mistakes all over again. Need to learn from the past no point going back, so future it is... free to make new mistakes look back and wonder what was it that was worrying me so much its  all gone.

6.  Is there something that you wished before when you were young but you didn't get it?
Yes I wanted to go for engineering but as I did not study I did not get it.

7.Have you been in a situation where you might have given up but still you chose to move on?
No I don't give up easily. I might turn my back at a situation but I go back and try to solve it.

8.Is their someone in your life who has been your source of strength and inspiration?

Yes! My Lord Raghvendra Swami in whom I have absolute faith.
Then my parents and husband need a special mention.
Needless to say my kids also play an important part  as source of strength.
All these people put together are the pillars nay axis around which my world is centred.

Pulao in Coconut Milk

F or Avidhva Navami when my friend Kanchan had come over I had made Mattar Paneer, Chapatti, Shrikhand,Carrot Salad in curds and Pulao.

Never has my pulao had so many takers! In fact I had not clicked a snap of it.  It was only everyone commented that it was tasty and one & when Shrija, Kanchan’s new daughter-in-law asked me for the recipe that I realised that I had hit on something tasty!

Someone mentioned that she did not know that onions and garlic are acceptable for any kind of festivities. Strictly speaking they are not but Kanchan, my friend does not mind me using onions and garlic. In fact my father who will be reading this is going to be scandalised!!

So this is the snap of the leftover pulao and a documentation of the method I followed which is already hazy.

Ingredients:
250 grms basmati rice (1 small glass)
2 cups Mixed Vegetables (I used french beans, carrots and corn)
2 Onion, cut lengthwise
2 Tomatoes cut fine
 1 petal from Star Anise
½ Bay Leaf
½ tsp Shah Jeera
450 ml Coconut Milk (a little less than the 2 glasses in the one that I used to measure rice)
 Oil
Haldi/turmeric (optional)

For grinding:
1 onion
2 Cardamoms
2 Cloves
½ tsp shah jeera
2 Green Chillies
1’ Ginger
 4 Garlic cloves
½ cup Coriander Leaves,a few leaves of mint and tulsi

Coriander for garnishing

Method:
1.     Wash and drain the rice.
2.     Meanwhile grind the masala to fine paste use water if needed
3.     In a thick pan heat a little and fry the rice for a few minutes.
4.     Remove from the pan and set aside.
5.     In the same pan heat about 2 tblspn oil, add the bay leaf and the star anise. Cook till they sizzle. Add the onion and fry till translucent.
6.     Add the tomatoes and & haldi/turmeric if using fry covered till tomatoes are mushy.
7.     Add the ground masala and continue frying till the   tomatoes disappear in the gravy. Use water if needed.
8.     Transfer the fried rice in the mixture.
9.     Add the coconut milk,   salt.   Stir well check the water. (My method of checking the water is quite rustic or 'gaunthi' as my husband calls it, I switch off the flame when I transfer the rice in the pan I am cooking level it out. Rest your fingers on the rice in the pan add the necessary liquid till the liquid reaches your knuckle line for rice in a pulao if you veggies are fried with the rice else add more little more water till the liquid is less than midway between the lower line and the top line of you knuckle). ((I hope I am making sense))!!
10.                     Switch on the gas on sim and let it cook without covering.
11.                      When the water evaporates from above the rice and you can see the rice add the veggies, mix with a fork lightly cover and cook till there is no water in your vessel.
12.                     Keep the vessel covered for at least 10 minutes then remove the cover and let it cool completely.
13.                     Fluff the pulao with a fork just before serving heat in the micro and serve garnished with coriander.
