My younger one is nut outside!

She does not like nuts in her cakes hence nut outside!!

But this is one cake she likes because of the coffee in the cake.

But my husband likes it a lot. In fact I have to stop him many times  from buying dates so that this cake is made again and again.

But inspite of having made it so many times I have not liked the pictures, I think I need suggestions for pictures!

Ingredients:
1 ¼ cup all purpose flour
¾ walnuts, chopped coarsely (80g)
1 cup finely chopped dates
¼ cup + 2 tbsp oil
2 tbsp butter
¾ brown sugar
¼ sugar
¼ cocoa
1 ts[p baking soda
1 tsp vanilla
3 tbsp milk
1 tbsp orange zest
1 cup hot water + 1 ½ tbsp coffee
1 tbsp flax seed
3 tbsp hot water
Method:
Make strong coffee with 1 cup hot water.
Soak the flax seed mix in the 3 tbsp hot water.
Sift the cocoa and flour, add salt.
Chop the dates and add to the hot coffee. Let the dates get mushy in the hot coffee.
Line 8 ½ to 4 ½ inch loaf pan with aluminium foil and grease with butter.
Preheat oven to 176°C.
15-20 minutes later add baking soda + orange zest to the date mix. Let it sit for 5 minutes.
Combine sugar+oil+butter+milk+vanilla essence.
Add the dry mix and the flax seed mix.
Add chopped walnuts.
Bake in the oven for 45-50 minutes.

Koma j~ A Persian Date Bread With Turmeric & Cumin

For this month in We Knead to  Bake we are baking  Komaj which is a Persian turmeric and cumin bread that’s filled with chopped dates.

I was skeptical about its acceptance at home and was right. Hubby refused to eat it! Since I suspected as much I made just 5 Komaj the rest I filled with cheese, chilli flakes and oregano. Sorry this I took  just one picture of the big roll I made and managed to delete that too.

Tthis dough has three rises instead of the usual two.

Date Cake(Eggless)

I have made the date cake from the site "Aayi's Recipes" many times.
It is just fantastic!!
Last week I tried the recipe twice, only the second time I had no
cashew nuts!! And so I substituted with almonds and 2 lonesome dried
figs.
I did not expect my kids to like it so I was quite surprised when the
younger one ate it.
Ingredients:
10 dates(Khajoor)
3/4 cup milk
3/4 cup sugar
1 cup atta
1/2 cup oil
11/4 tea spn baking soda
20 almonds and 2 figs
Method:
1. Soak the dates in warm milk overnight.
2. Remove the seeds.
3. Preheat the oven to 180°C /350°F.
4. Grease a tray mine is a bowl which is 6"x3".
5. Add sugar and grind them to a smooth paste along with the milk in
which it is soaked in.
6. Add the nuts and figs and grind to the desired consistency. I
generally grind it fine as my kids do not like nuts in their cake.
7. Add oil and mix.
8. Sieve together flour and baking soda. Add the flour one table
spoon at a time and mix slowly.
9. If you are adding whole nuts add the nuts now and mix.
10. Bake for 35 minutes, till the cake leaves the sides of the bowl or
till a knife inserted in the cake comes out dry.
