Chocolate And Coffee Ice Cream


Ice cream is a frozen food eaten as a snack or dessert.

 Ice creams are usually made from dairy products, such as milk and cream, and often combined with fruits or other ingredients and flavours. Generally commercial ice creams are sweetened with sucrose, corn syrup, cane sugar, beet sugar, and/or other sweeteners and flavoured and coloured they also have added stabilizers.  The mixture is stirred to incorporate air spaces and cooled below the freezing point of water to prevent detectable ice crystals from forming. The result is a smooth, semi-solid foam that is solid at very low temperatures (<35 °F / 2 °C). It becomes more malleable as its temperature increases.

Historically China had a frozen mixture of milk and rice around 200 BC. Apparently they knew about freezing mixtures of salt and ice.

In the Middle East the Arabs used an ancient type of ice house, a yakhchal, in Yazd, Iran. The major ingredient in the production of ice cream was milk and sweetened it with sugar rather than fruit juices. It was flavoured with rosewater, dried fruits and nuts.

 In the Persian Empire, people would pour grape-juice concentrate over snow, in a bowl, and eat this as a treat.  They used snow saved in the cool-keeping underground chambers known as "yakhchal", or taken from snowfall that remained at the top of mountains by the summer capital Ecbatana. In 400 BC, the Persians went further and invented a special chilled food, made of rose water and vermicelli, which was served to royalty during summers. The ice was mixed with saffron, fruits, and various other flavours.

The Roman Emperor Nero (37–68 AD) had ice brought from the mountains and combined it with fruit toppings to create chilled delicacies.

Closer home in the sixteenth century, the Mughal emperors used relays of horsemen to bring ice from the Hindu Kush to Delhi, where it was used in fruit sorbets.

In Europe Italian duchess Catherine de' Medici is credited with introducing ice cream into Europe in the 16th century.

Whatever the history we will all agree that ice creams make the blistering heat bearable and the lady of the house will agree that it keeps her out of the kitchen and the heat for some time.

For today I have tried making this Icecream from the Tupperware Booklet. Needless to say it was yum and all the ice creams that I tried after this one got compared with this one.

All of them were declared flop. 

So much that one I threw out and the other was made in a smoothie. After it was over hubby tells me why that was delicious. Anyway I have no pictures of it.


Chocolate And Coffee Ice Cream

Recipe Source: Tupperware
Ingredients:
  • 1 tropical twin whipping cream
  • ½ tropical twin condensed milk
  • 2 tblspn un-sweetened cocoa powder
  • 1 tblspn instant coffee mixed with hot water

Method:
  • Whisk whipping cream until you get soft peaks and set aside.
  • Whip condensed milk, coffee and cocoa powder till well blended.
  • Fold gently the whipped cream and condensed milk.
  • Pour on aluminium containers overnight.
  • Serve topped with nuts or grated chocolate.( Mine had customers before the scoop was out so I did not add anything).

Berry Short Cakes

Berry shortcakes was a Baking partners challenge. The July month challenge (I know I am late) was suggested by Reeni of Cinnamon nice and everything nice.  This eggless recipe is a simple one and you can use any berries of your choice.  
I agree that there is no better way to showcase them then with fresh whipped cream and classic shortcakes. These shortcakes are like biscuits only instead of butter they use heavy cream.

My family love them a lot. In fact by the time I came back from a bloggers meet they were all gone.

Mousse~ A Blog Hop Week 21


For Blog Hop Wednesday Radhika paired me with Ruchira Hoon Phillip I was delighted as I was paired with someone I admired. Ruchira blogs at  Cookaroo  and she is amazing. If cooking is a passion then Ruchira is passion personified!

If you don’t believe me just check her recent posts where she has made a Flowerpot Cake, complete with the fondant flowers. The amount of patience she has to make these beautiful flowers and not to mention the research and the preparations (for one I hate the collecting of all the ingredients especially when I have to pick up things from two different parts of the city, thank Goa Panaji is a small place, but I still hate it). Then she has these Nutella Cake, brownies. These are just few examples there are many more. Do go through her place.

As I went through the blog I remembered a delicious mousse that I had seen and wanted to make for some time now but kept postponing. 

What better time than now and what better than chocolate.

Ruchira’s recipe serves 3 so I doubled her recipe.

I started by measuring out double the semi sweet chocolate, as the Supermarket has run out of my brand of Dark Chocolate and then opened the new packet of white chocolate.

 Can you imagine my shock to see no white chocolate inside?

 Then I read the cover and saw that it was milk compound and I assumed that white chocolate and milk compound is same. How I can make the same mistake again and again I do not know but there is some wiring problem in my brains I am sure.

Then I consoled myself as younger kid and I do not enjoy white chocolate that’s fine. Will have a shade darker mousse it will not black and white mousse but brown and light brown mousse.

Then as I was whipping the cream my elder daughter, Apeksha requested me not to make it just chocolate layers but to add a layer or whipped cream. So I ended up with 9 servings of mousse. 3 small and 6 big, small for the dieters and rest for us to hell with diet(ers).

Like most sweets in my house I expected there will not be many takers therein lay my mistake. Apparently the mousse was better than the local bakery; (“much much better” were the exact words! That is high praise from my 18 year old) and the mousse was much appreciated.

I am glad I took the pictures when I did for if I waited to setup my stage alias washing machine for my pictures …  I would have just post the recipe sans the pictures… for the pictures had to be taken today and by the time I came back from work there were empty glasses to greet me.
