Chocolate And Coffee Ice Cream


Ice cream is a frozen food eaten as a snack or dessert.

 Ice creams are usually made from dairy products, such as milk and cream, and often combined with fruits or other ingredients and flavours. Generally commercial ice creams are sweetened with sucrose, corn syrup, cane sugar, beet sugar, and/or other sweeteners and flavoured and coloured they also have added stabilizers.  The mixture is stirred to incorporate air spaces and cooled below the freezing point of water to prevent detectable ice crystals from forming. The result is a smooth, semi-solid foam that is solid at very low temperatures (<35 °F / 2 °C). It becomes more malleable as its temperature increases.

Historically China had a frozen mixture of milk and rice around 200 BC. Apparently they knew about freezing mixtures of salt and ice.

In the Middle East the Arabs used an ancient type of ice house, a yakhchal, in Yazd, Iran. The major ingredient in the production of ice cream was milk and sweetened it with sugar rather than fruit juices. It was flavoured with rosewater, dried fruits and nuts.

 In the Persian Empire, people would pour grape-juice concentrate over snow, in a bowl, and eat this as a treat.  They used snow saved in the cool-keeping underground chambers known as "yakhchal", or taken from snowfall that remained at the top of mountains by the summer capital Ecbatana. In 400 BC, the Persians went further and invented a special chilled food, made of rose water and vermicelli, which was served to royalty during summers. The ice was mixed with saffron, fruits, and various other flavours.

The Roman Emperor Nero (37–68 AD) had ice brought from the mountains and combined it with fruit toppings to create chilled delicacies.

Closer home in the sixteenth century, the Mughal emperors used relays of horsemen to bring ice from the Hindu Kush to Delhi, where it was used in fruit sorbets.

In Europe Italian duchess Catherine de' Medici is credited with introducing ice cream into Europe in the 16th century.

Whatever the history we will all agree that ice creams make the blistering heat bearable and the lady of the house will agree that it keeps her out of the kitchen and the heat for some time.

Anyway if you are interested try reading Wikipedia that is where I have copied all this from.

For today I have tried making this Icecream from the Tupperware Booklet. Needless to say it was yum and all the ice creams that I tried after this one got compared with this one.

All of them were declared flop. 

So much that one I threw out and the other was made in a smoothie. After it was over hubby tells me why that was delicious. Anyway I have no pictures of it.


Chocolate And Coffee Ice Cream

Ingredients:
  • 1 tropical twin whipping cream
  • ½ tropical twin condensed milk
  • 2 tblspn un-sweetened cocoa powder
  • 1 tblspn instant coffee mixed with hot water

Method:
  • Whisk whipping cream until you get soft peaks and set aside.
  • Whip condensed milk, coffee and cocoa powder till well blended.
  • Fold gently the whipped cream and condensed milk.
  • Pour on aluminium containers overnight.
  • Serve topped with nuts or grated chocolate.( Mine had customers before the scoop was out so I did not add anything).

I mentioned when I shared the Mocha Coffee Cake with Espresso Glaze my friend’s daughter, Saavani, loved the cake and wanted me to bake a cake for her. I decided to “#FireUpYourOven" to make the same cake.


Disaster struck in the form of “NO COFFEE”! 

Being Dhulivandan or Rang Panchmi the day we play colours, all the shops were closed. That is when I decided to make a Marble cake.


A slight change in the ingredients and method gave me such a delicious and soft rich marble cake quite unlike the once I have eaten in the past.

Made me wonder why on earth I used to think that making a Marble Cake is beyond my capabilities.

This last month has been a wonderful journey with my friends, who like me have been preparing for this beautiful Mega Marathon that we have had. With a heavy heart I bid adieu to this series only to be back with more delicious bakes that I will make from my friends blogs.  For if I thought I will shrink the size of my bookmark list I am mistaken its grown by leaps and bounds!

Marble Cake

Ingredients:
  • 2 cups Maida/APF
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 12 tblspn butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 1 cup sour cream
  • 1 ½ cup milk
  • 2 tblspn cocoa dissolved in 1 ½ tblspn hot water

Method:
  • Grease an 8 inch pan.
  • Preheat oven to 350⁰F/180°C.
  • Sift flour, baking powder, and soda, salt.
  • Combine butter and sugar at medium speed till pale and fluffy.
  • Add the sour cream and beat well.
  • Add 1 egg at a time and beat after each addition.
  • Add vanilla essence.
  • Add the flour alternating with milk the last addition should be flour.
  • Divide the flour in 2 parts.
  • In one add cocoa mixture and mix well.
  • The third will remain as vanilla.
  • In the   pan add vanilla batter the add chocolate next and with a knife mix the batter.
  • Bang the pan on the counter 3-4 times to settle the batter.
  • Bake for 45 minutes or till a skewer inserted in the cake come out clean.
  • Transfer the mould to a wire rack for 10 minutes then unmould and cool.

For my younger ones birthday I wanted to order a cake for her.


Hubby and she were adamant that I should make the cake not order it.


That is when I, “#FireUpYourOven"  (d)  to bake 3 cakes.

One was a Date and Walnut Cake,  A Pound Cake that I covered with ganache the third one was this delicious cake that was appreciated a lot.

In fact one of my friend's daughter asked me for a full cake for her.

Ingredients:

  • 2 cups Maida/APF
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 12 tblspn butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 1 cup sour cream
  • 2 tblspn cocoa dissolved in 1 ½ tblspn hot water
  • 2 tblspn coffee dissolved in 1  tblspn hot water
Glaze:

  • 1 ½ tblspn coffee dissolved in 2-3 tblspn water
  • ¾ cup powdered sugar
Method:

  • Grease an 8 inch bunt pan.
  • Preheat oven to 350⁰F/180⁰C.
  • Sift flour, baking powder, soda, salt.
  • Combine butter and sugar at medium speed till pale and fluffy.
  • Add 1 egg at a time and beat after each addition.
  • Add vanilla essence.
  • Add the flour alternating with sour cream the last addition should be flour.
  • Divide the flour in 3 parts.
  • In one add cocoa mixture and mix well.
  •  in the second add the coffee and mix well.
  • The third will remain as vanilla.
  • In the bunt pan add a scoop of coffee, add vanilla, the add chocolate next to one another.
  • Bang the pan on the counter 3-4 times to settle the batter.
  • Bake for 45 minutes or till a skewer inserted in the cake come out clean.
  • Transfer the mould to a wire rack for 10 minutes then unmould and transfer to a serving tray.
  • Pour the glaze over the cake and let the cake cool completely before serving.

Puddings!!

After 3 days of puddings today I thought I will see what puddings are… I know I am closing the stable door after the horse but...

Puddings according to Wikipedia,” are believed to come from the French boudin, originally from the Latin botellus, meaning "small sausage", referring to encased meats used in Medieval European puddings.”

Puddings are made in savoury and sweet. But in UK and commonwealth countries it’s a usually a dessert.

This time around I have looked at some sweet puddings, later I think some savoury puddings need to be explored!

Anyway this is the only pudding that was not bookmarked. I stumbled into it and fell in love with it. I had to,"Fire up my Oven for it" And the girls they loved in fact Apeksha, my elder one has asked me to make it for her birthday!

Ingredients:
  • Melted butter, to grease
  • 150g /1 cup maida
  • 2 tsp baking powder
  • 100g / ½ cup caster sugar
  • 2 tablespoons cocoa powder
  • 125ml / ½ cup milk
  • 50g butter, melted
  • 1 egg, lightly whisked
  • Ice cream, to serve

Chocolate sauce:
  • 155g / ¾ cup, firmly packed brown sugar
  • 2 tablespoons cocoa powder
  • 375ml /1 ½ cups boiling water

Method:
  • Preheat oven to 180°C.
  • Brush a 1.5L /6-cup capacity ovenproof dish with melted butter to lightly grease.
  • Combine the flour, sugar and cocoa powder in a medium bowl. Make a well in the centre.
  • Combine the milk, butter and egg in a large jug. Gradually pour the egg mixture into the flour mixture and stir until well combined.
  • Pour into the prepared dish and use the back of a spoon to smooth the surface.

To make the chocolate sauce:
  • Mix well the sugar and cocoa powder into a bowl.
  • Sprinkle over the pudding mixture in the dish.
  • Gently pour the boiling water over the cocoa mixture.
  • Bake in oven for 40-45 minutes or until a cake-like top forms and a skewer inserted halfway into the centre comes out clean.
  • Set aside for 5 minutes to cool slightly.
  • Serve with thickened cream, if desired.

Do your children say they don’t like sweets yet wade through a bottle of Nutella like 1 bottle a week?  I find that too expensive so I was happy when I saw this Homemade Chocolate Spread at Julie's place. This I had to make.

The girls gave me mixed reaction the elder one did not mind it the younger one did not like it so did not eat it much. But if she runs true to her form then she will finish the bottle as we reach the bottom of the jar!!

I used dark chocolate but you can use semi-sweet chocolate too.

Homemade Chocolate Spread
Ingredients:
  • 1 cups almonds 2 cups
  • 1 tblspn oil 
  • 200 grms chocolate, chopped fine

Method:
Make Almond Butter:
  • Put the almonds in a chutney jar of the blender.
  • Grind until smooth, the jar will be hot stop the mixer and let it cool.
  • Scrape the sides of the jar and run the blender/grinder more till the almonds give out oil and starts to come together.
  • When you can no longer blend it add the oil as required little by little.
  • Blend again until you get a smooth finish. This is Almond butter.

Let’s now make the chocolate spread:
  • In a double boiler melt the chocolate or melt in a microwave glassware by running the MW in spurts of 30 seconds till the chocolate melts.
  • Stir till all the chocolate is melted and is smooth.
  • Remove from heat if using the double boiler method and add the almond butter to this melted chocolate.
  • Stir the mixture completely to incorporate well and to get a creamy smooth finish.
  • Your chocolate spread is ready to serve with breads.
  • Cool down completely before storing in bottles.

Chocolate and nuts and condensed milk this is an amazing combination. My younger one who does not want milk because she claims Mamma adds nuts in them( grinds and adds nuts mind you , as if I have the time to do that)  went gaga over this slices.

For baking partners Swathi set us a challenge for baking Carrot Cake and Cinnamon Chocolate Babka Muffins!
I wanted to make both but Since I have been having problems at my site, been blogging for one month I have been very busy so I made these delicious Cinnamon Chocolate Babka Muffins. Let me tell you the word chocolate had me making these for they are sure to find takers at home plus I have 4 slabs that need immediate attendance before rains was an added impetus . :D

Chocolate filled Canapes for BM #24




Treacle tart this was one of the desserts I was make for the HP themed party. Making treacle tart for 30 people in not my cup of tea( I still have to read the recipe shhh!), so we made canapes with chocolate.
Again the pics are by the kids I think!

For Canapés you will need
·        200 grms Cream (I used Amul Cream)
·        330 grms Dark Chocolate (chopped fine)
·        20 grms butter
·        Canapes cases( I made 40 )
·        Cherries and sprinkles

Method:
·   Chop the chocolate to small pieces
·   Heat the cream so that it just bubbles. Remove off the flame
·   Add the chocolate and mix well.
·   Add the butter.
·   Beat well.
·   Arrange the canapes cases on the serving tray.
·   Spoon the chocolate in the cases.
·   Decorate with cherries and sprinkles.
·   Cover with cling film and chill in the refrigerator till needed.
Must confess that my neighbour's daughter Stacey did these alone with Akanksha helping her. I just made the chocolate and gave her.

Chocolate Almond Cake Baking Partners



As a part of the Baking Partners we were to make a Christmas cake and when I saw the recipes my heart sank.

Don’t get me wrong there was nothing wrong with the recipes it’s my ability to make them that I questioned. I questioned myself how did I think I am capable of making anything here.

Somehow the cake senses that I am comfortable baking and it gives me trouble. Either it sinks or it burns or spills.

So when I saw the cakes here I was tense and I questioned my sanity. Well let me tell you that the family does not know about all the stress I go through when I am baking. Then it will be a full stop for my baking with an exclamation mark. For then I get one of my anxiety attacks and start coughing and get breathless etc. in short everything an asthmatic patient goes through.

I choose what I thought was easier of the two.

Also I have never tried writing with icing. In fact I realize now that the syringe kind of icing tube is of no use. So please ignore the mess that I have made with the writing part. As you can see the kid had no problems in fact she was pleased as punch. O I did complain that she did not eat the cake apparently she did and she likes it. In fact I am happy she has asked me make it again.

Chocolate & Strawberries


I had made this Chocolate honey frosting for a cake (recipe follows).


The amount of icing as usual was more than I needed, for my kids love chocolate in any form. But before I offered the leftover icing to them I dipped some strawberries in them. Then dried them over a butter paper in the fridge.

And you can see even I could not resist the strawberries. Too bad that we had only one container of strawberries but them the season for the luscious berries has just started.

Egg-less Molten Lava Cake

When Gayatri announced that for the Eggless Baking Group we were to try Molten Lava cake that  Sowmya of Nivedhanam  had suggested  this month my girls were thrilled!!

For the challenge Gayatri had provided a recipe from Noobcook. The recipe is here but in case you want to try making it egg less it will not work as it is.

I mean replacing just the eggs with the replacer that you plan like I did will not work; you will have a cake that looks like this in your hands.

 The others have successfully tried the recipe by increasing the flour and reducing the butter.

Then I decided to use the recipe that I had tried out ages ago from Vidya of Sugar n’Spice. Below is the same recipe but made egg less with a few changes.
By the way these pictures are taken in the evening after sunset kindly excuse!

Ingredients:

·       115 grms of chocolate
·        115 grms of butter (I used Amul) + for greasing 6 ramekins( I used bowls)
·        ¼ cup curd (thick)
·        ¼ cup milk
·        1 tsp vinegar
·        I tsp vanilla essence
·        1/3 cup sugar
·        ¼ cup + 1 ½ tbspn Maida

Method:

1.     Pre heat oven to 180ºC. Butter the ramekins sides and the base.
2.     Mix the chocolate and the butter in the microwave proof bowl and melt the chocolate and butter. Use short spurts of 30 secs till all the chocolate has melted. Stir in between the microwaving.  It will be faster if the chocolate is in smaller bits.
3.     Meanwhile beat the milk, vinegar, curd and sugar in a medium bowl till the sugar dissolves. Stir in the vanilla essence.
4.     Once the chocolate has melted Add the chocolate and butter mix to the milk and curd mixture and sugar mix, add the maida and fold well till well incorporated.
5.     Pour the mix till ¾ full and bake in the oven. The time taken will differ from oven to oven .Do check it out for your oven.
6.    I needed exactly 12.62 minutes for this gooey effect.
7.      Serve hot immediately with ice cream or whipped cream or dusted with icing sugar.
