When Swathi asked me to suggest two baking dishes for the Baking Partners Challenge this tart was my first choice! 

It’s colourful and savoury and well I cannot claim its healthy! 

So it’s liked by the girls and I don’t have to beg them, “please finish that “! In fact I have to post whatever pictures I took before the attack!

Thanks Swathi for letting me choose the bakes else like I said the magazine would have been gracing my kitchen without a page being opened.

Agar Agar Chocolate Pudding


I cannot resist the packets of agar agar gracing the shelves in the super market.  After a long debate I have with myself end up in my shopping bag.

 Now you may wonder what magical pull does this weed have on me. Basically after making the eggless quiche I know it can be used as a filling in savoury bases too.  

Now at home I keep postponing making something out of them so they grace my kitchen shelf for some time.  

The other day I finally bit the bullet and made this beautiful pudding. Something my younger daughter appreciated so much that she had to be reminded that it needs to be shared with others.

Orange Biscotti for Egg less Baking


For this month's egg less bakingchallenge, Gayathri selected a recipe Called Orange Blossom Biscotti from baking obsession.com. in her introduction she had said that,” Biscotti is one recipe I couldn't get perfect while doing egg less version.”  The idea Gayathri had was we can bookmark the best one and this can be used in future. 

I must say that she does have a point; there are many things that went wrong in my biscotti.   

My troubles started with pre-heating I put the butter paper on the tray, greased it and preheated. Since we had guest at that particular moment the only way I came to know about my blunder was when the strong burnt smell seeped in the living room.

Luckily it had not caught fire, but that was my last butter paper and being a Sunday close to lunch time I had no chance of getting more butter paper. So this time I had to line with a foil. End result was loaves underside resembled charcoal. Then the two loaves that I had made as they were baking thought I was a cruel lady, separating the two lovers so they decided to meet half way. I got no height or the lovely biscotti looks. In fact I had to cut them in half to make the few decent pieces that I got. 

You will think after all these ranting that the biscotto was not worth baking. Yes? No you are wrong.

 The biscotti I carried home when I went to my father’s place. At my insistence Pappa ate it. Do you know what he said, “You baked this? I tastes like it is professionally made.”

 This is the best compliment he has paid me so far…:)

Lemon Coconut Bread

If you guys are wondering where I have disappeared it’s just that I am sooooooo overworked that I do not want to sit on the computer in the evening.
So I have been tardy in acknowledging your post and   those that have been posted at the event I am guest hosting. Please bear with me. It’s just this month (hopefully) then I am free.............. J

  Now coming to today’s post...

When I saw this month’s Egg-less baking challenge as Dimah’s Lemon Coconut Bread I was surprised at the combination. Never in my wildest dreams considered lemon and coconut as a combination in bread.

I also had a sinking feeling, as I know for sure this is something my girls will not like. I did consider sitting it out this bake but then that will never open my daughters to newer options, if not today, tomorrow, someday they will be interested in this combo! Live in hope!

Anyway now when I am posting this I was thinking that a dash of chilli in the mixture that is used as filling maybe they would have enjoyed it more.

Next time maybe, right now all my cakes are being looked at with a little bit of suspicion!! Don’t blame them……!

Chocolate Lamingtons


Lamingtons like I said yesterday was our July Challenge for the Eggless Baking Group. A group started by Gayatri where we try and convert bakes with eggs to egg less.

 Do you girls collect recipes in books, files chits etc. I have this habit and the reams that they fill are enough to go round the earth at least twice.

 I am not exaggerating! Honestly, or should I say God promise! :)

So there are recipes and recipes that are just lying there for me to try out. Occasionally one of them makes its way to the top of the pile.  I was just thinking Lamingtons and if I can get someone interested in them, when for the egg less baking group Gayatri’schallenge was Lamingtons.

She gave us a choice of both Chocolate flavoured and lemon flavoured.

Long time ago one of our friends Vivek who lives in the UK had mentioned about this delicious lemon curd. Curious I searched for the recipe and somehow the procedure listed out put me off. It seemed too complicated and eggy and what if no one eats it questions plague me and I gave up.

Now after a long time I searched was for the eggless lemon curd recipe.

Eggless Quiche


 In continuation with Gayatri’s challenge for the Eggless baking group I am posting my Quiche recipe.

I have already written about the making of the base here now here is the filling and the finished quiche.

Let me warn you that even though I have never eaten Quiche before and I loved it.

  But then I am not a difficult person to please especially when it comes to food. :)

My younger daughter had promised me she will not, sorry “N-O-T” bold and underlined at that” eating quiche with all that palak/spinach and tofu yuck, “is now pestering me for the last slice that has escaped her mouth.

My husband and most importantly my FIL, yes My Father-in-Law loved it and ate it happily every time it was offered.

Quiche Base


I am a part of the egg less baking group. Though I have nothing against eating eggs or baking with eggs I decided to join it.  As it has the rusty gear in my head to start creaking into action. It takes some time but then it’s too good a challenge baking without the eggs. Once I start the adrenaline starts flowing and I enjoy it. 

Just when by kids told me no more sweet cakes Gayatri the founder of the group announced baking a Quiche. 

Now this was one word of the many words I do not know how to pronounce. When I was discussing it with my daughter Apeksha I said I have to bake a “QUEEch” like a queen and she corrected me with a shocked look on her face and told me to call it Keesh rhyming with Kissh.

Apparently she has already eaten it at Nescafe’s. She has told me that I should eat it there to see how it tastes. Now since that is not immediately possible I went ahead and made it.

So let’s start with the basics the first thing that you will need is the base so here it is though Gayatri choose Martha Stewart recipe and someday I will make it Martha Stewart way with eggs but  today for the base however I went to Stephanie Jaworski of Joy of Baking here.

According to Stephanie Quiche base is also known as Pate Brisee pronounced as Path bree-ZAY. The key to making a good pastry base is cold water and butter and also less handling. Joy used the food processor to make her dough. I used my good old hands. 

The next major buy may be a food processor but then to keep it we will have to buy a new flat. What an idea sirji? Sure way to press for a new flat so you know for sure where my processor will remain. :D 

Ingredients for Quiche base
350 grams Maida
1/8 tsp salt
14 grams granulated white sugar
225 g Amul butter, chilled and cut to 1 inch pieces
60 ml-120 ml ice water

Method:
1.     Place the flour, salt and sugar in a big bowl and mix well. Here I used the electric mixer.
2.     Add the butter and continue mixing with your hand breaking the butter with your fingers till the whole thing resembles a coarse meal.
3.     Pour the 60 ml (1/4 cup) cup of water and mix slowly till the mix till the dough holds together when pinched. Add more water if needed 1 tsp at a time. Do not over mix.
4.     Turn the dough on the work surface and gather it in a ball. Divide it in 2 pieces and flatten each to a disk. Cover in plastic and refrigerate for minimum 30 minutes to 1 hour before using. This allows the butter to chill and the gluten to relax. My dough was the overnight guest of my fridge.
5.     In theory for each disk of pastry on a lightly floured surface roll the dough to fit an 8 or 9 inch tart pan. Turn the pan upside down on the rolled out pastry it should be 1 inch larger than the pan. The roll has to be of even thickness take care that it does not stick to the workplace. You have to roll the pastry on the rolling pin and then unroll it on the pan after dusting the excess flour. Never pull the pastry to avoid shrinkage. With a floured bit of pastry press to the base and sides.
6.     In the best of time I cannot roll out a chapatti so this was a real real test or a nightmare. I could not manage to roll out the dough for the first two bases. So I tried pressing the flour in the tin for the first two and smoothening it to the minimum.
7.     The third one I did manage to roll out but it was not too good. It kept cracking up at the edges and you know once a crack it keeps getting bigger and bigger. But by   this time when  I reached the third base the bulb that is in my head started flickering to life and  I realized that I had not made the dough in the processor so I did need to knead the flour a bit and maybe add more water when I was making the dough. Am I correct in my analysis? Please help me here to understand where I went wrong.
8.     In whatever way get it in the pan and since I have a pie pan I fluted the edges. Your pastry is ready.
 To pre bake:
1.     Poke the base with a fork this will prevent the pastry from puffing up.
2.     Cover and rest for 20 minutes to chill the butter and rest the gluten.
3.     Preheat the oven to 200ºC. Line the shell with a foil. Fill the foil with rice or beans.
4.      Place the pan in the centre of the oven and bake for 20 minutes or till the crust is dry and light brown.
5.     I let them cool in the pan on a wire rack for 10 minutes then unmolded the base. Let it cool completely.
Stephanie said you get 2 bases but I got 3 smaller ones.

Now since I was not too good in rolling out the dough and I had pressed it in the pan there were a few cracks. But the liquids in the filling did not seep out for which I was thankful.

Most important handle the bases with care they are extremely delicate. my first one cracked when I poked it by accident. 

I am terribly sorry I did not think of taking pictures of the base will do so next time around.

Almond Meal & Banana Muffins~ Eggless Baking


I have in an effort to get rid of my lethargy joined new groups where I will be challenged to push my limits and try new recipes.

One of them happens to be Eggless baking by Gayatri.   This is my first time here and I am already behind schedule. Sorry Gayatri!  Will try to toe the line next time... mind you will try... : D! 


We are to try out banana muffins this time. There are 3 issues in my place one the kids should not know there are bananas in the muffins two there has to be chocolate in it and three has to be healthy read no maida or all purpose flour in it.

Well in an effort to experiment I surfed the web and found a delicious recipe here. To be honest I have not checked out the whole fare here but that I plan to rectify shortly.

Egg less Apple sauce Chocolate Cake

There were 2 things that came into play when I baked this cake.
When my friend Vidya told me there was a sponge cake competition in the local mall.  I was eager to join it for I would meet a lot of other better bakers.

There were apples that were about to say bye bye to this world if not attended too. So I made apple sauce from here.

 The problem was I did not have the Cameo apples as needed and I had just discovered that the apples lying around are gala apples. But I made the sauce anyway using the apples I had and the sauce was delicious. 

The yield was 1 ½ cup.

Nachni-che-Satv or Ragi Pudding



Staying in Goa from the time I got married 23 years to be exact has exposed me to quite a few wonderful dishes in this cuisine.

There is a preconceived notion that there are no vegetarian dishes in this cuisine. I remember when I was to be married all my neighbours and friends kept on telling me that I will have nothing but “Samudra chawlikai” that is cluster beans from the sea. Of course fish is the staple food here in Goa, but a Goan does “go veg” at least 2 times in a week and on all kinds of festivals, panchmi, chathurtis etc.

Any celebration and you have “mangane” a kind of kheer and of course “Nachni-che-satv”.

Nachini or ragi is a very nutritious. It is good for infants and old and the in-betweens also. Its calcium and iron is easily assimilated by the body. Try this wonderful grain in sweets and savoury food stuff alike.Read more about it here.

Micro wave Orange Cake~A Blog Hop

Since my husband & I have our birthdays just 4 days off one another we celebrate together. But this time I wanted to surprise him with a cake on his birthday.

Surprise has to be surprise does it not? So what better than a cake that cooks in the microwave and in 12 minutes when he is at walk, best time his evening walk?

Egg-less Buttery Cookies~ A Sweet Punch



When Priya posted her egg less buttery almond cookies I could not resist them. I had such a craving for them that I baked them immediately.

 Me and follow recipes? Surprised are you not?

Well there are times when I do follow recipes, but you are correct I did not follow it to the T made a few changes to suit our tastes and my pantry contents. I baked them 3 times now.

Black and White Wednesday Godi Kutid Payasa~ A Blog Hop

Blog Hop one schedule that I thoroughly enjoy.
 Though I am taking care not to tax my fingers a lot this one piece is typed out in bits and pieces and over a long period. Hopefully by the end of the next month my fingers will be better.  Okay enough of this Old Woman cry baby story let’s get down to today’s post.

I was eager to try out some payasa/payasam/kheer dishes as I had performed the “Vaibhav Laxmi Varat” and the last day I was to invite some friends over and the nevidya was payasa. To add to the pleasure of cooking some sweet, that I love, was the fact that my father had come for his health check up and was given a clean chit. So this was celebration all the way!!J

Quick Fix Microwave Brownie(Egg-Less)- The Blog Hop 1


They say Man proposes God disposes!

Here is an example of how you plan and how you change plans or how things get sidelined…

My father was to come here to Goa for a minor knee surgery, a one day procedure so I knew he was to stay with us from 12th July and I expected him to want to go back by the 31st. But that was not to be, we discovered that he has some other problems about which none of us were aware of, even Pappa himself!

 After going in and out of hospitals and a battery of investigations we have discovered that he needs a pacemaker!! It’s a minor procedure very routine but he is my father and I am worried and upset.

The silver lining is that he will be okay!!


Now, because of this I have been unable to post any recipe in My First Event for I have not stuffed the capsicum that I have brought for the purpose. Sorry Vatsala will do so immediately in the next week (I hope)!

Also I am a part of Blog Hop,  Radhika of Ticking Palates’s  brainchild and an amazing effort  and I am paired with Deepali of  The Confusion Cook so I was to select and cook something from this space.  And was I excited about the whole thing!!   

Unfortunately however or should I say fortunately I have tried the recipe' Quick Fix Microwave Brownie, I choose only once and Kid No. 2 took pictures (thank God or I would not have had anything to post today not even the empty bowl).  It disappeared in minutes in fact we did not wait for the ice cream also it just vanished in a poof.

I was to make it once more, in a larger batch and serve it with a selection of ice creams like coffee, vanilla and chocolate but I am sorry I just cannot. Not just right now!  Not only do I lack the will but also the time.  I am sorry being a wet blanket but what are friends for? I am sure you will understand.  I expect you to participate in my event and pray for me to have strength in these times.

The only change is I used Amul butter and hence no salt  also I heated the milk and butter in the micro for 10 secs to melt the butter and since I had no chocolate chips so I used 4 kisses dark chocolate !! Yummy!!
Maybe next time I make it I will twist it!! Just maybe…. only time will tell :-)

Egg-less Chocolate Cake 2 Or Whole Wheat Egg-less Chocolate Cake

The Egg-less Chocolate Cake! This is how tall it was!!
Amazed at this gargantuan cake! Well I was too and it has a story behind it…


My friend Vidya came around the other day on her way out for her evening walk and left behind a container for me to microwave as hers was for repairs. She said it was a cake and to just microwave it for 10 minutes. She had also left behind a sachet of Eno’s fruit salt to be used if needed. I used it!!

Since all my micro containers were for a wash I took out the microwave rice cooker that I rarely use and just store my extra dish cloth in it and used it. Boy was I glad I did it, the cake was huge anything else and I would have spent the evening moping the oven floor and cursing her (especially since she was on her way to a party by then)!!

Of course she shared the recipe with me!! We do that regularly. What more you use regular gehu ka atta to make it.


Ingredients:
2 cups whole wheat flour (yes whole wheat /Gehu ka atta)
1 ½ cup sugar
½ tsp soda
1 tsp baking powder
2 tblspn cocoa
1 tblspn drinking chocolate
½ tsp instant coffee (my addition)
½ tsp vanilla essence
2 tblspn butter (I used salted butter)
½ cup curd
½ + 1/3 cup milk (I used 1 cup)
2.5 grms Eno’s salt

Method:
1.       Melt the butter totally add the curds and milk. Mix well and keep aside.
2.       Mix all the dry ingredients except the Eno’s salt in a big bowl.
3.       Add the butter mixture. Mix well. It is okay if the mixture is soft dough consistency the sugar will melt. Keep aside for 4 hours.
4.       Grease a huge container. Mix the Eno’s salt in the batter and transfer to the container.
5.       Microwave for 10 minutes or till the knife inserted comes out clean.

Egg-less Chocolate Cake

When I saw this egg-less chocolate cake I knew I had to make it. The only question was when. I have made it exactly as Priya has said here
Abit contrary to my reputation isn't it? But I did not melt the chocolate pieces. Since I had scraped it with the vegetable peeler it was easy to mix it in the batter. Also since my chocolate was milk chocolate I did not get the rich colour that Priya's cake has. But taste superlative!!Thanks Priya!!

Eggless Wheat Cookies



After I saw this recipe of cookies here I went a bit crazy. Never have I seen some lovely recipe where all the   ingredients are available at hand. Easy to make and they great taste!!

I read about them just before lunch and as I was heating up and laying the table I mixed the ingredients, baked after lunch.
